Abstract

В роботі розглянуті питання епізоотології, ветеринарно-санітарної експертиза молока, визначення якості та безпечності молока та молочної продукції при фальсифікації. The aim of the work was to conduct research on modern methods of veterinary and sanitary inspection of milk and dairy products used in veterinary medicine. Carrying out a thorough analysis based on the results of our own research and statistical data on the quality and safety of raw whole milk and dairy products sold on the Berezinsky food market in Dnipro. In 2018-2020, 3,585 milk examinations for a total amount of UAH 22,785.5 were conducted in the state laboratory of veterinary examination of the market. The milk sold on the market in its chemical composition in the vast majority met the requirements of current state standards, namely the mass fraction of fat was 3.6%, protein - 3.6% and dry matter 11.48%. When determining the sanitary and hygienic indicators and freshness of milk, 17 samples (7.3%) with an acidity above 20 ° T were found, falsification of milk was confirmed, incl. 16 samples of milk (6.4%) falsified by removing part of the cream were detected, the fat level averaged 1.3%. According to the results of veterinary and sanitary examination, 255 kg of milk was disposed of by denaturation. We recommend the state laboratory of veterinary examination of the market "Berezinsky" in Dnipro to conduct a clearer record of detected defects and falsifications of milk and sour cream. Strengthen control over the sale of milk on the market in order to reduce sales of substandard or low quality of this type of product.
